Business West Magazine - Australis Aquaculture first filled its tanks in August 2004, and a year ago sold its first fish – an Australian sea bass called barramundi. Since then, the company has built on the cache of a little known fish and the staying power of sustainable aquaculture practices, and now hopes to build a name as the next big thing in American cuisine.
