"What a beautifully clean- tasting and succulent fish! I love Australis Barramundi’s versatility and that it can be prepared in so many ways. From a tasty Mediterranean dish to a simple yet elegant pan sear, this fish does not need a lot of embellishment. Just delicious!” - Chef John Sheely, Houston’s Mockingbird Bistro
Mockingbird Bistro graciously hosted the 'Australis Barramundi Tasting Event' as part of our recent launch into Texas. Chef Sheely created a diverse, mouth-watering menu that demonstrated the versatility of Barramundi. He featured everything from Barramundi Crudo with apple and pear mousse, heirloom beet salad and crispy sunchokes, to Barramundi En Papillote. John Sheely, owner/executive chef of Mockingbird Bistro Wine Bar, is a native Houstonian who got his start in the restaurant business as a teenager, working in fast-food restaurants to earn spending money. Sheely worked as a chef and executive chef in Colorado for 20 years before returning to Houston and opening the renowned Riviera Grill. Based on the elegant and irresistible food at Riviera, Sheely was honored as a “Modern Master” by noted restaurant critic John Mariani.
At his second Houston restaurant, the award-winning Mockingbird Bistro, Sheely gives diners comfort food at a sophisticated level. His “Texas Provence” cuisine combines his love of country French cuisine with his Texas roots. The restaurant has been named One of the Best New Restaurants in America in Esquire; selected as a Top Table by Bon Appetit; a Neighborhood Gem in Gourmet; and Where to Eat Now in Texas Monthly, among other accolades. Sheely is a board member of the Greater Houston Restaurant Association, a member of Chaîne des Rotisseurs, and is a recipient of “Chef of the Year” and “Restaurateur of the year” awards at the 2006 Houston Culinary Awards.
