A classic dish from Veracruz, Mexico, we love it because it brings so many delicious flavors and ingredients together, and all you have to do is pour them on top of your roasted fish! It’s fresh and flakey, perfect if you’re looking for a lighter dinner.
Step 1 Preheat the oven to 375℉, grease a baking pan that will fit the barramundi fillets, and place them in. In a small bowl, mix the lime juice, oregano and salt and pepper. Pour this mixture right over the fish and set aside.
Step 2 Heat the olive oil in a skillet over medium-high heat. Add the onions and cook until they’re translucent. Add the garlic and tomatoes and cook until they’re tender. Mix in the olives, capers, brown sugar, bay leaves, cinnamon and optional jalapenos and cloves. That’s your sauce! While it’s simmering, put your fish in the oven and let it bake for 10 minutes.
Step 3 Take the fish out, pour the sauce over it and bake for another 5 minutes. Your fish will be perfectly flakey and flavorful.
Top it off with sprigs of fresh thyme, and enjoy.
