Ingredients:
· 4 barramundi fillets, about 3-5 oz each
· 2 tablespoons melted butter or olive oil
· 4 brioche buns, potato buns, or split baguette sections
· 4 lettuce leaves
· 1 large tomato, sliced
· Lemon wedges, for serving
· Optional: pickles, tartar sauce, remoulade, or hot sauce
Blackened Seasoning:
· 2 teaspoons sweet or smoked paprika
· 1 teaspoon garlic powder
· 1 teaspoon onion powder
· 1 teaspoon dried oregano
· 1/2 teaspoon dried thyme
· 1/2 teaspoon kosher salt
· 1/2 teaspoon black pepper
· 1/4 teaspoon cayenne pepper, or to taste
Directions:
1. Mix the seasoning: In a small bowl, combine paprika, garlic powder, onion powder, oregano, thyme, salt, black pepper, and cayenne.
2. Season the fish: Pat barramundi fillets dry. Brush both sides with melted butter or olive oil, then coat evenly with the blackened seasoning.
3. Cook the barramundi: Heat a cast iron skillet or heavy pan over medium-high heat. Cook fillets for 3–4 minutes per side, until the seasoning forms a dark crust and the fish is opaque and flakes easily.
4. Toast the buns: While the fish rests, toast buns or baguette sections until lightly golden.
5. Assemble the sandwiches: Spread tartar sauce, remoulade, or hot sauce on the buns if desired. Add lettuce, blackened barramundi, tomato slices, and pickles if using.
6. Serve: Serve immediately with lemon wedges.
