Blood Orange Whole Grilled Barramundi

Ingredients

1 whole Australis Barramundi, cleaned (your fish guy will do this)

2 tablespoons extra virgin olive oil

1 blood orange, juiced

1 Teaspoon kosher salt

1/2 Teaspoon fresh ground black pepper
Preparation

Preheat grill to med. heat.

Make three incisions in each side of fish.

Season with one tablespoon the blood orange vinaigrette.
-
Place fish on grill, dab with blood orange vinaigrette and grill roast for 20 minutes.
Serve hot with some great grilled crusty bread and a bottle of Cooper’s beer.
